A process that caresses every note of agave:

  • Cocimiento in Masonry Ovens: We use masonry ovens to cook the agave. This careful process ensures that sugars and aromas develop optimally. It’s not merely cooking; it’s a ritual that honors tradition and awakens the essence of agave.

Extraction of Agave Juice: Our agave juice is obtained through grinding the cooked agave, separating sugars from the fiber. This guarantees high-quality fermentation and a flavor profile that has captivated many tequila enthusiasts.

Controlled Fermentation: During fermentation—the precursor to our elixir—we rigorously control the temperature to optimize our selected yeast. This inhibits unwanted yeast and contributes to Holden’s distinctive character, resulting in a must rich in aromas and flavors.

Distillation in Alembics, Double Distillation: The fermented must undergoes double distillation in our alembics. The first distillate, known as “ordinary,” already meets our odor and flavor criteria. It is then re-distilled a second time to achieve even greater purity, becoming our Tequila Holden, also known as “blanco.”

  • Tequila Añejo: One year of aging in American oak barrels gives Holden Añejo an intense golden color and a complex taste, blending mature agave notes with hints of vanilla, caramel, and spices.
  • Tequila Extra Añejo: A minimum of three years of aging in American oak barrels brings Holden Extra Añejo to life—an elixir with a deep amber color and exceptionally rich flavor. The harmony between aged agave, noble wood, and spices seduces even the most discerning palate.
